Top Tips for a Veggie Holiday


No need to ruffle anybody’s feathers—tasty faux fowl and other veggie goodies are easy to find and fit for any feast. Follow these animal-friendly tips and watch everybody dig in.

• “Birds” of a Different Feather
Vegetarian “turkeys” Tofurky (tofurky.com) and UnTurkey (nowandzen.net) include a savory soy- and wheat-based roast, stuffing, and gravy. • Tradition With a Twist

• Yummy Side Dishes
Mashed potatoes and roasted vegetables, for example, are easily “veganized”—just use vegetable broth, margarine, egg replacer, soy milk, and other vegetarian ingredients.

Turkey-Free Pot Pie
4 cubes or tablespoons vegetable bouillon
2 1/2 cups hot or boiling water
1/2 cup nutritional yeast
1/2 cup flour
1/2 cup oil
1 teaspoon garlic salt
1/2 teaspoon pepper
1 can white potatoes, cut in small pieces
1 1/2 cups frozen or canned/drained mixed corn, peas, and diced carrots
1/2 log Chickettes, cut into tiny cubes
1 box Pepperidge Farm puff pastry shells

Add vegetable bouillon to hot water to make stock. Set aside. In a large pot, combine the yeast and flour. Place over low heat, stirring constantly until lightly toasted (be careful not to burn). Add the oil, stirring to make a thick batter. Slowly add the stock, stirring with a whisk until thick. Add more water if too thick. Add garlic salt and pepper and stir well.

Add all veggies and Chickettes. Heat through. Fill cooked puff pastry shells with mixture. Enjoy! (Note: Chickettes are available through www.nomeat.com.)

• Egg-streme Eggless Baking
Commercial egg replacer, a powder made mainly from potato starch, is an easy way to replace eggs in recipes. Other egg-citing stand-ins are mashed tofu, bananas, or applesauce.

• No Moo Milk
Try soy, rice, almond, or oat milk in place of cow’s milk in recipes—find ’em at your local super market.

• Bye-Bye, Butter
Hello, margarine! It can replace butter in anything.

• Jell-No!
Gelatin is made from cow’s hooves and skin—yuck! Look for vegetable-based “gelatin” in the kosher section of supermarkets.

• Look Out for Lard
Babe lovers, beware! Ready-made pie crusts and other pastries can contain pig fat. Check labels for vegetable shortening.

• Tasty Topping
Find dairy-free whipped “cream” at supermarkets, health food stores, and kosher delis. Watch out for casein, whey, and other dairy ingredients.

• Chuck the Chicken
Broth Use savory vegetable bouillon cubes in soups, sauces, and stuffings. Commercial stuffing mixes free of animal ingredients are easy to find.
