Think quick: What do elephants, chickens, and cows all have in common? Just like you, they've got great moms! Animal moms love their babies and take care of them just like our moms take care of us, making sure that they are well fed and safe and even playing with them. Elephant moms, for example, are always ready with an affectionate caress, a gentle nudge in the right direction, or a cool mud bath to help their babies beat the heat. Mother hens cluck softly to their unborn chicks, and cow moms separated from their calves have been known to jump fences and travel for miles looking for their babies.

Of course, your mom is the greatest mom in the world, so this Mother's Day show your love for her and for animals (and their moms) by making her a yummy vegan breakfast in bed!

French Toast

A perfect way to "toast" your mom for all that she does for you, this sweet breakfast treat is super-easy to make and good to eat. Want to make something different? Click here for even more tasty breakfast recipes.

Ingredients

1/2 cup soy milk
3 Tbsp. unbleached flour
1/4 tsp. cinnamon
1 tsp. vanilla extract
4 slices whole-wheat or sourdough bread
Fresh fruit, fruit preserves, or maple syrup

Directions

  • Whisk together the soy milk, flour, cinnamon, and vanilla.
  • Dip the bread in the batter, turning it to coat both sides.
  • Fry it until golden brown in a nonstick skillet.
  • Serve with fresh fruit, fruit preserves, or maple syrup.

Don't forget about all those furry, feathered, and finned moms out there! Honor animal moms by not eating their babies—or wearing them, either, for that matter. Another great way to honor animal moms is to avoid circuses and other animal exhibits, to buy only cruelty-free products, and to boycott pet shops and breeders and make sure that everyone you know does the same!
